Heat the oil in a large pot. Add the beef and brown on all sides until golden color is achieved. This takes about 8-10 minutes.
Add the diced onion and garlic. Sauté for 3 minutes until fragrant and the onion becomes translucent.
Pour the water or beef broth over the meat. Bring to boil and then reduce heat. Let simmer over medium heat for 20 minutes.
Add potatoes, carrots and chayotes. Continue cooking for 15-20 minutes until all vegetables are tender.
Taste and adjust seasoning with salt and pepper to your preference. Stir in fresh chopped cilantro just before serving.
Serve hot in deep bowls. Accompany with corn tortillas and lime if desired.
