Pupusas are El Salvador's national dish, thick tortillas filled with cheese, beans and savory meats. This traditional favorite is perfect for family meals and served hot with curtido and tomato sauce.
Ingredients
- 2 cups corn masa dough
- 1 cup warm water
- 200g fresh cheese crumbled
- 1 cup refried beans
- 150g cooked ground pork or chicharrón
- 1 medium onion diced
- 2 green chiles minced
- Salt and pepper to taste
- Oil for cooking
Preparation
- Mix corn masa with warm water and salt until you get a clay-like consistency. Let it rest for 10 minutes.
- In a bowl, combine crumbled fresh cheese, refried beans, cooked meat, onion and green chiles. Mix well and set aside.
- Take a portion of masa (egg-sized), make a hollow center and fill with cheese and meat mixture. Seal the pupusa well and flatten between your palms.
- Heat a comal or skillet over medium-high heat. Place pupusas and cook 3-4 minutes per side until golden and crispy.
- Serve hot topped with curtido (fermented cabbage slaw) and tomato sauce. Enjoy!
Chef tip: Chef's tip: Keep filled pupusas covered with a damp cloth while preparing to prevent drying. If the dough cracks, wet your hands with water to smooth it out.
