Pabellón Criollo is the national dish of Venezuela, a delicious and colorful combination that represents the country's culinary identity. This traditional meal combines shredded beef, white rice, black beans, and fried plantains on a single plate.
Ingredients
- 500g beef (brisket or chuck)
- 1 cup cooked black beans
- 2 cups cooked white rice
- 2 ripe plantains
- 2 eggs
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 medium tomatoes, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- Salt and pepper to taste
Preparation
- Place beef in a pot with water, salt, and half the garlic. Boil for 1.5 hours until tender. Shred the meat with your fingers.
- In a skillet with oil, sauté remaining onion and garlic until golden. Add tomatoes and cook for 5 minutes.
- Add shredded beef to the sauce, sprinkle with cumin, salt, and pepper. Simmer for 10 minutes.
- Peel ripe plantains and slice them diagonally. Fry in hot oil until golden on both sides.
- Warm black beans in a pan. Serve on a plate: rice, beans, beef with sauce, fried plantains, and a fried egg on top.
Chef tip: For more flavorful beef, simmer the broth slowly and don't discard it: use it for the sauce. Plantains should be very ripe (yellow with black spots) to be sweeter and more tender.
