250 gGround beefcooked
1 cupRefried beans

Step-by-step preparation

1
🥣 Prepare the dough

In a bowl, mix corn flour with warm water and salt. Knead until you get a smooth and manageable consistency, without being too sticky.

2
🍖 Prepare the filling

Heat the ground beef in a skillet with a little oil. In another bowl, have ready the refried beans and cheese cut into small cubes.

3
🤲 Shape the pupusas

Take a portion of dough the size of a golf ball. Make a hole in the center and fill with some cheese, meat and beans. Close and flatten between your hands to form a 1 cm thick disc.

4
🔥 Cook on the griddle

Heat a griddle or large skillet over medium-high heat. Cook the pupusas 3-4 minutes per side until golden and crispy.

5
🍽️ Serve hot

Place the pupusas on a plate and serve with curtido (cabbage salad) and homemade red sauce.

💡 Chef's tip: The secret is having the griddle hot enough to brown the outside while the filling heats through. Don't press too hard while cooking.
