Kak Ik is an authentic Guatemalan chicken broth with Mayan roots, prepared with aromatic spices and guajillo chiles. A traditional comforting dish that represents the ancestral cuisine of Guatemala.

Step-by-step preparation
Cut the chicken into medium pieces. Heat the oil in a large pot and brown the chicken on all sides for 5 minutes. Remove and set aside.
Soak the guajillo chiles in hot water for 5 minutes. Remove the seeds and blend with the tomatoes, garlic, and some of the soaking water.
In the same pot, sauté the diced onion until it becomes transparent. Pour in the chile and tomato mixture, cook for 3 minutes.
Return the chicken to the pot, add the chicken broth, cumin, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the chicken is cooked through.
Taste and adjust seasoning with salt. Serve hot in deep bowls with ayote bread or homemade tortillas.
