Step-by-step preparation

🍗 Prepare the chicken

Cut the chicken into medium pieces. Heat the oil in a large pot and brown the chicken on all sides for 5 minutes. Remove and set aside.

🌶️ Prepare the chiles

Soak the guajillo chiles in hot water for 5 minutes. Remove the seeds and blend with the tomatoes, garlic, and some of the soaking water.

🧅 Sauté the onion

In the same pot, sauté the diced onion until it becomes transparent. Pour in the chile and tomato mixture, cook for 3 minutes.

🍲 Simmer the broth

Return the chicken to the pot, add the chicken broth, cumin, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the chicken is cooked through.

Taste and adjust seasoning with salt. Serve hot in deep bowls with ayote bread or homemade tortillas.

💡 Chef's tip: You can add potatoes or chayotes to the broth to make it heartier. Kak Ik tastes even better the next day when the flavors have melded together.
