Step-by-step preparation
Wash the beef leg well and cut into medium pieces. Blanch in boiling water for 5 minutes, then remove and rinse.
In a large pot, heat water or broth. Add the prepared leg, onion and garlic. Let simmer over medium heat for 45 minutes.
Incorporate cut potatoes and yucas. Continue cooking for 30-40 minutes until everything is very tender.
Taste and adjust with salt and pepper to taste. Add fresh chopped cilantro just before serving.
Pour into deep bowls keeping the broth generous. Serve with corn tortillas or bread.
