- 4 garlic cloves minced
- 1 carrot sliced
- 2 tomatoes peeled and chopped
- 8 cups beef broth
- Salt and pepper to taste
- 1 tablespoon fresh cilantro
- 2 tablespoons oil
Preparation
- In a large pot, heat the oil and sauté the onion and garlic until golden. Add the chopped tomatoes and cook for 2 minutes.
- Add the beef and chicken, cook for 5 minutes stirring occasionally to seal the meat.
- Pour in the beef broth and bring to a boil. Reduce heat, cover and cook for 30 minutes until the meat is tender.
- Add the potato, cassava, plantain, carrot and corn cob. Season with salt and pepper. Cook over medium heat for 20-25 minutes until all tubers are soft.
- Remove from heat, garnish with fresh cilantro and serve hot in deep bowls. Accompany with white rice and avocado if desired.
Chef tip: For a deeper flavor, make your own beef broth. Sancocho tastes even better the next day when the flavors have fully integrated.
