Colombian Sancocho

Sancocho is a typical Colombian dish that represents the essence of home and family cooking. This hearty stew combines meats, tubers and vegetables in a flavorful broth that warms the soul.

Ingredients

  • 800g beef (rib or shank)
  • 500g chicken breast
  • 3 medium potatoes peeled
  • 2 cassavas peeled and cut
  • 1 green plantain cut
  • 2 corn cobs
  • 1 large onion chopped
  • 4 garlic cloves minced
  • 1 carrot sliced
  • 2 tomatoes peeled and chopped
  • 8 cups beef broth
  • Salt and pepper to taste
  • 1 tablespoon fresh cilantro
  • 2 tablespoons oil

Preparation

  1. In a large pot, heat the oil and sauté the onion and garlic until golden. Add the chopped tomatoes and cook for 2 minutes.
  2. Add the beef and chicken, cook for 5 minutes stirring occasionally to seal the meat.
  3. Pour in the beef broth and bring to a boil. Reduce heat, cover and cook for 30 minutes until the meat is tender.
  4. Add the potato, cassava, plantain, carrot and corn cob. Season with salt and pepper. Cook over medium heat for 20-25 minutes until all tubers are soft.
  5. Remove from heat, garnish with fresh cilantro and serve hot in deep bowls. Accompany with white rice and avocado if desired.
Chef tip: For a deeper flavor, make your own beef broth. Sancocho tastes even better the next day when the flavors have fully integrated.
