🔪 Peel the plantains
Cut the ends and make lengthwise cuts. Carefully remove the skin.

✂️ Slice into rounds
Divide each plantain into slices approximately 2 cm thick.

🔥 First frying
Heat oil to 160°C. Fry the slices until tender but still white, about 3-4 minutes.

🥄 Flatten
Remove plantains and place each slice between two papers. Flatten firmly with a flat object until 1 cm thick.

🔥 Second frying
Increase oil temperature to 180°C and fry again until golden and crispy, 2-3 minutes.

🧂 Serve
Remove onto paper towel, sprinkle with salt and serve hot.
💡 Chef's tip: The secret is using green plantains and double frying. The first fry cooks them, the second makes them crispy.
