- 1 white onion, diced
- 200ml Mexican crema
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Preparation
- Heat the oil in a skillet and briefly soften the tortillas in the hot red sauce to make them flexible.
- Mix the shredded chicken with the onion, salt, and pepper. Place a tablespoon of the mixture in the center of each tortilla.
- Roll the tortillas tightly and place them seam-side down in a greased baking dish.
- Pour the remaining red sauce over the enchiladas, distributing evenly. Drizzle with Mexican crema.
- Cover with grated cheese and bake at 180°C for 25-30 minutes until the cheese is golden and bubbling. Serve hot with fresh cilantro.
Chef tip: For more flavorful enchiladas, make your own homemade red sauce by toasting guajillo or ancho chiles. You can prepare the enchiladas a day ahead and refrigerate; simply heat before serving.
