Bandeja Paisa is the most emblematic dish of the Antioquia region in Colombia, known for its abundance and authentic flavor. This traditional meal combines meats, legumes and carbohydrates in one generous presentation.
Ingredients
- 500g pork (ribs)
- 250g Antioquia chorizo
- 200g bacon or chicharrón
- 2 eggs
- 300g cooked red beans
- 2 cups cooked white rice
- 2 corn arepas
- 1 ripe plantain
- 1 avocado
- 100g fresh white cheese
- 3 medium tomatoes chopped
- 1 small onion chopped
- Salt and pepper to taste
- Oil for frying
Preparation
- Cook the pork with salt and water for 45 minutes until tender. Remove and set aside.
- Fry the chorizo, bacon and chicharrón in a pan until golden. Place on a plate.
- In the same pan, fry the eggs (one or two per person) with the meat oil.
- Prepare or heat the arepas, rice and beans. Peel and fry the ripe plantain in slices.
- On a large plate, distribute all elements: meats in center, rice, beans, egg, arepa, plantain, avocado, cheese and tomato and onion salad.
