Light the charcoal in advance. Wait for a layer of white ash to form before cooking for uniform temperature.
Remove meat from refrigerator 20 minutes before cooking. Generously sprinkle coarse salt and black pepper on both sides.
Mix olive oil, minced garlic, parsley and lemon juice in a bowl. This will be your seasoning to brush during cooking.
