Cook fresh shrimp in salted water for 3-4 minutes. Drain, peel and let cool completely.
Place shrimp in a bowl and cover with fresh lime juice. Let rest 10 minutes to 'cook' with the acidity.
Finely chop the red onion, tomatoes without seeds and fresh cilantro. Mince the chili pepper to taste.
Add onion, tomatoes, cilantro and chili to the bowl with shrimp. Add tomato sauce if desired.
Adjust with salt and pepper to taste. Refrigerate 5 minutes and serve cold with saltine crackers or popcorn.
