Pupusas are El Salvador's iconic dish par excellence. These thick tortillas filled with cheese, beans and meat are cooked on a griddle until golden. Delicious and very easy to prepare at home.

Step-by-step preparation
In a bowl, mix corn flour with warm water and salt. Knead until you get a smooth and manageable consistency, without being too sticky.
Heat the ground beef in a skillet with a little oil. In another bowl, have ready the refried beans and cheese cut into small cubes.
Take a portion of dough the size of a golf ball. Make a hole in the center and fill with some cheese, meat and beans. Close and flatten between your hands to form a 1 cm thick disc.
Heat a griddle or large skillet over medium-high heat. Cook the pupusas 3-4 minutes per side until golden and crispy.
Place the pupusas on a plate and serve with curtido (cabbage salad) and homemade red sauce.
